In Yemen, the method of beekeeping has always been a traditional one. No chemicals or drugs are allowed. No machinery is used. To extract the honey they use smoke (from dried camel skins) that forces the bees to come out and move away. Then they take off the cover and the comb is extracted with a knife. It is put into boxes or larger containers by hand. The honey is then poured, unheated and raw, into containers, thus preserving its vital live enzymatic constituents.
